SALMON TACOS

I know i’ve been MIA, I just can’t get it together over here.  My blog always goes last on my list when life takes over.  I’m sorry but I am still trying my best to keep up with KEEPING UP WITH KRISTEN.  LOL  Even though I don’t have time to post here regularly, if you want to keep up with me find and follow me on instagram.  Sometimes it’s a lot easier for me to post there!

This is not even a recipe to be honest.  I mean it’s so easy it can be done in less then 30 minutes!  You pretty much just buy everything from Trader Joe’s (except the dressing) and throw it all together.  The hardest part of this “recipe” is cooking the salmon and even that takes under 10 minutes.

SALMON TACOS (serves 6-8 people)

2 lbs Wild Caught Salmon

2 tsp Trader Joe’s taco seasoning

Olive oil to drizzle on salmon

Mango and Jicama Slaw

Organic Slaw mix

2 limes

Your favorite salsa

Guacamole (store bought or homemade)

Avocado Cilantro dressing

Trader Joe’s corn and wheat tortillas

Place salmon on a foil lined baking sheet.  Drizzle olive oil all over and sprinkle the taco seasoning on the salmon until its fully covered.  Place the salmon on the top rack under the broiler for about 6-8 minutes, depending how you like your salmon cooked.  We like ours cooked medium because it will continue to cook a little while you prep the toppings and tortillas.

Prepare toppings, and by that, I mean take them out of their bags and containers and put in separate bowls.  Heat tortillas in a pan with a little oil to soften.

And then MAKE YOUR TACOS!  Top them with whatever you like!

See, not even a recipe!  So simple and healthy especially for the HOT summer nights you don’t really feel like cooking.  Change up your next Taco Tuesday with these bomb ass salmon tacos and I promise these will be on rotation weekly!!
